Was founded in 1996 by Don & Trish Stephens. On graduating from the University of Southern California, Don moved from Sacramento, where he had grown up, to San Francisco to attend Hastings Law School. To pay for his education he and some partners started a restaurant on Union Street – a steak house named "The Cooperage." The attraction of good red wine, particularly Cabernet Sauvignon, combined with steak, gave him the long-term goal of becoming a vintner and making wines that would rival the best in the world. The desire stayed with him through his career and maifests as the fruit of this goal; his highly rated, limited production, cult wines.
100% Chardonnay
This chardonnay exhibits a broad array of ripe fruit aromas, ranging from mango and papaya to peach/apricot, as well as perfumed honey, pear and beeswax. On the palate the fruit character is enveloped by notes of yeast, toasty oak, vanilla, and a hint of caramel, with a lingering impression of fresh peach nectar. It combines three clones of Chardonnay to create a complex, multi-dimensional impression.
